Spirit of Women presents Celebrate! featuring Brandon Chase Welborn
Forrest General Spirit of Women and floral designer, Brandon Chase Welborn, hope you’ll “Celebrate!” with them in this virtual series.
Welborn, who will host the multi-segment series, will provide tips for elevating the décor of your next occasion by using things you have in your home or items you may have started collecting. “We hope these fun virtual events will inspire those watching to add designer touches to their own celebrations,” Welborn said.

Forrest General Ambassador Honored with Surprise Make-A-Wish Party
Wishes came true for Forrest General Ambassador Clancy Slay. At only 17-years old, she was diagnosed with Stage 2 Hodgkins Lymphoma. During her diagnosis, she was granted a “Wish,” and now it has come true. With the help from her friends, family, and Make-A-Wish Mississippi, she was celebrated and gifted the technology she needs to finish her education. Visit our newsroom to learn more about her story.

Extra Table Farm to Fork Ride or Run on May 8
Extra Table is hosting the Farm to Fork Ride or Run on May 8, a unique culinary experience with four rides/races to choose from and an exciting mystery race with a secret distance.
The event provides the ultimate experience for foodie cyclists and runners. Beginning at The Barn at Bridlewood and traveling along the Longleaf Trace, participants will ride/run and sample an array of healthy, fresh foods prepared by local chefs. Runners will enjoy delicious foods at the finish-line party, and cyclists on the bike ride can sample foods throughout their ride at the several culinary stops along the course.
All social distancing and COVID-19 guidelines will be followed during the event.

Summer Nicoise Salad with Grilled Fish
Fish is a low fat high-quality proteins, and is filled with omega-3 fatty acids and vitamins. It’s rich in calcium and phosphorus and a great source of minerals.
Make the dressing: Combine first four ingredients in a food processor. With the machine running, add the olive oil until blended and season with salt and pepper.
Grill the salad: Coat the potatoes, onion, tomatoes, and beans and tuna with oil and sprinkle with salt. Grill the potatoes over medium-low heat and cook 30-35 minutes, turning occasionally.
Put the onions, tomatoes, and green beans on a medium-heat part of the grill and cook until they’re lightly charred and tender (10-15 tomatoes and 4-6 minutes for the beans.) As the vegetables come off the grill, transfer them to a tray, drizzle with dressing and cover with foil.
Grill the tuna over medium-high heat until it’s slightly pink in the center, 6-minutes per side, cool, then slice, Line four salad pates with the lettuce and arrange the grilled vegetables and tuna on top. Garnish with remaining ingredients, sprinkle with the basil and serve.
For the dressing:
1 tbsp minced anchovies (about 4)
1 clove garlic, minced
2 tbsp Dijon mustard
4tsp fresh lemon juice
1/2 cup extra-virgin olive oil
salt & pepper
For the salad:
8 to 10 small red potatoes, quartered
1 large red onion, sliced 1/2 inch thick
2 plum tomatoes, halved
1/2lb green beans, trimmed
extra virgin olive oil
1 1/2lb fresh tuna
6oz bibb lettuce
4 anchovy fillets
2 tbsp drained capers
4 hard-cooked eggs, peeled & halved
1/4 cup Nicoise black olives
1/3 cup fresh basil leaves, thin strips
